Healthy Homemade Sushi (That Feeds Your Soul Too)

Sushi is one of my absolute favourite things to make at home. It’s quick, easy, nourishing, and endlessly customizable. Plus, there's something so meditative about the process—laying out the rice, placing the ingredients just right, rolling with intention. It’s a little ritual I return to often.
For the base, I use organic short grain brown rice. You can either cook it according to the package or simmer it with a splash of mirin. I prefer to add the mirin after cooking while the rice is cooling—it brings great flavour, though the texture will be slightly less sticky (which I actually enjoy).
For this version, I breaded and deep-fried some shrimp—I found a brand that’s both preservative-free and sustainably sourced, which always feels like a win. I used a pre-made breading mix (easy button!) but you could go gluten-free or opt for a classic tempura batter if you're feeling fancy.
Inside the rolls:
✨ Cucumber strips
✨ Avocado slices
✨ Green onion mixed into the rice (sometimes I’ll throw in fried onions for extra crunch)
✨ Sesame seeds sprinkled for a nutty touch
I use a classic bamboo sushi mat to roll. Lay down your nori, spread a thin layer of rice (leave space at the far edge for sealing), and place your ingredients in a neat line near the edge closest to you. Be mindful not to overstuff—less is more here. Roll tightly, then wet the edge of the nori with a little water to seal it closed. A serrated knife works best for slicing it into beautiful rounds.
For dipping, I go with soy sauce and wasabi (I know, sushi purists may protest—but it’s delicious!). Lately, I’ve been loving fresh ginger slices instead of the usual pickled kind. And one day, I’m manifesting fresh wasabi—but until then, the green paste will do!
This meal fills me up without weighing me down, and I love that I can mix it up with whatever I have on hand. The brown rice adds a whole new layer of earthy flavour—and I always feel so good after eating it. It's satisfying, high-vibe, and perfect for tuning into your body’s needs.
