Coconut fruit popsicle

On March 8, 2025 I started a health journey that changed my life. I started fasting during the day and eating at night as per my Human Design digestion type. I do listen to my body so I would take in juices or easily digestible shakes during the day if I was feeling overly hungry but most days it was just water and salt. Things were amazing. No more skin conditions or muscle pain. The brain was even working!


Fast forward to 4 months later and I head to Ontario for a festival and family visit. I was doing okay. I tried to keep the caffeine, gluten and sugar to a minimum. And normally a one time treat wouldn't affect me but after 10 days of this I got home and went back to eating the new way and OMG it was detox city!


I was so sick for 3 days. The worst headache! Thank god I came out the other side okay. Holy moly!


Now I am on the straight and narrow but it's summer in PEI and ice cream is such a great treat on the hot days. So I decided to try my hand at an ice cream substitute. I know my achilles heel is actually sugar. It's so detrimental to me even a little amount can make me sick. I still sweeten but with honey or maple syrup. And good luck finding naturally sweetened ice cream in the stores!


This is a really great tasting treat that fills that void that ice cream has left. I hope you enjoy it!


1 tin of coconut milk

1 cup of your fresh or frozen fruit of choice (the one depicted has cherries and mango in it)

2 tablespoons of honey or to taste


Blend it up as much as you like. Some will want it chunkier. Others not so much.


This will make about 8 - 10 popsicles depending how much you fill the little popsicle molds. I had a 6 popsicle mold so I used the rest in a smoothie.


SO GOOD!!!
